Abstract
The Bukhara restaurant at the Sheraton Hotel takes its name from a place in Afghanistan that was once part of the north-eastern reaches of India. Bukhara is famous for its carpets and was inhabited by tribal nomads who travelled with their worldly belongings. Their spirit was that of a free people: robust, down-to-earth, and masculine.
